24 small boiler onions
3 Tablespoons butter
1 Tablespoon oil
1/4 teaspoon garlic salt
1/4 teaspoon pepper
3 Tablespoons parsley

Directions:
Directions:
Select 24 small boiler onions. Skin onions and prick both ends with knife point. Simmer until 3/4 done. Don't overcook. Drain. Melt butter and oil in a large frying pan. Coat onions with butter and oil mixture in a single layer. Sprinkle with garlic salt and pepper. Fry over medium heat until brown on all sides, turning onions constantly as they brown. Add more oil and butter if necessary. When brown, sprinkle with 3 Tablespoons chopped parsley. Stir until onions are coated with parsley. Serve hot or can be reheated.
