6 - 8 tart apples 3/4 cup packed brown sugar 1/4 teaspoon salt 1/2 teaspoon cinnamon 1/2 teaspoon grated lemon rind 1 Tablespoon lemon juice 2 Tablespoons butter
Line 9 inch pan with pastry. Add sliced apples. Sprinkle with spices, and dot with butter. Cover with top crust. Moisten and press edges. Brush crust with milk. Cut a few slits in crust. Bake at 450º for 10 minutes, then at 350º for 50 minutes.
