3 c yellow or zucchini squash (or a combination of both) sliced into 1-1/2 circles
1/4 c sour cream
1 T butter or margarine
2 T grated cheddar cheese
salt to taste
1/4 t paprika
1 egg yolk, beaten
1 T chopped fresh chives
1/2 cup bread stuffing mix
1/4 cup grated Cheddar cheese
3 T butter, melted

Directions:
Directions:
Steam squash until tender. In a saucepan combine sour cream, butter, 2 tablespoons grated Cheddar cheese, salt and paprika. Stir over low heat only long enough to melt cheese. Remove from heat: stir in beaten egg yolk and chives. Add the steamed squash and stir gently to mix. Place mixture in a casserole dish. In a separate small bowl, combine bread stuffing mix, 1/4 cup grated Cheddar cheese and 3 tablespoons melted butter. Sprinkle over the top of the casserole. Bake in preheated oven 350º for 20 to 30 minutes. let stand 5 minutes before serving.
