2 lb. hamburger
1 small to medium onion, chopped
2-16 oz. cans Brooks Chili Beans, mild
1-32 oz. can diced tomatoes
1 pkg. 6-Gun Chili Mixin's (in most grocery stores)
Salt (I use Kosher), to taste

Brown hamburger, then add chopped onion.

In large pot, combine Brooks Chili Beans, tomatoes and browned hamburger/onion mixture. Take the 6-Gun Chili Mixin's and follow the instructions on the package, then add to pot. (Note: there are 3 pkgs in the 6-Gun Chili Mixin's, a small seasoning pouch for the "heat" (do not use the entire package -- add gradually), a large seasoning package for flavor and a white thickening powder. I do not use the white thickening powder). Stir and warm the mixture. Salt to taste.

This is Mimi Troester's recipe. It's good on day 1 and better on day 2. I think the secret is two-fold --the Brooks Chili Beans and gradually adding the amount of "heat" you like from the smallest pouch in the 6-Gun Chili Mixin's.
