10 oz. pkg. frozen chopped spinach
1/2 c. chopped onion
1/2 c. chopped green pepper
1 c. shredded cheddar cheese (about 4 oz.)
1 1/2 c. milk
3/4 c. Bisquick baking mix
1 tsp. salt
1/4 tsp. pepper
3 eggs

Directions:
Directions:
Heat oven to 400º. Lightly grease a 10 in. pie plate. Thaw and drain spinach. Do not cook. Mix spinach, onion, green pepper and cheese in pie plate. Beat remaining ingredients until smooth, about 15 seconds in blender. Pour into pie plate.

Bake 35-40 minutes, or until golden brown and knife inserted halfway between center and edge comes out clean.

Let stand 5 minutes before cutting. Frozen broccoli or cauliflower may be used instead of spinach.
