Ingredients:  
1 head cauliflower, cut into florets
4 T. butter
4 T. flour
1/4 tsp. salt
1/4 tsp. pepper
Dry mustard (just a pinch)
1 c. milk
1 c. Swiss cheese, grated
2-3 slices Italian bread
Garlic, finely chopped (to taste)
Extra butter to cook croutons

Directions:
Directions:
Cheese Sauce: Blend flour, salt, pepper and dry mustard in bowl. Melt 4 T. butter over low heat; add flour mixture. Add milk; bring to slow boil. Stir in cheese until melted. Set aside.

Croutons: Rip pieces of bread into small irregular pieces. Cook in butter with garlic until toasted.

Cauliflower: Steam cauliflower florets (about 5 minutes). Drain. Pour cheese sauce and homemade croutons over florets. Serve hot.
