1 lb. penne or shell pasta, cooked and cooled
1 bunch arugula
1 c. cherry or grape tomatoes, cut in half
6-8 oz. goat cheese
1/4 c. extra virgin olive oil
1/2 tsp. salt
1/2 tsp. pepper

Directions:
Directions:
Cook pasta and cool. In separate bowl, combine olive oil, salt and pepper. Add pasta. Crumble goat cheese throughout pasta. Stir in arugula and tomatoes.

This is a fast and healthy pasta dish. It's not a hot meal so it's nice in the summertime. Pasta shapes that will hold some of the goat cheese work best.
