5 Large Baking Potatoes
1 T. Olive Oil
1/4 tsp. Red Pepper Sauce
8 oz. Shredded Mexican Style Cheese
6 Slices pre-cooked Bacon, Chopped
1/4 C. Green Onions, chopped
1/4 C. Jalapeño Peppers, Chopped
1/2 C. Sour Cream
1 T. Red Wine Vinegar
2 tsp. Chives, Chopped

Pre heat oven to 425º. Scrub and prick potatoes, microwave on high for 1-20 minutes. Let cool, cut each potato lengthwise into 4 wedges. Scoop out the inside of each one with a teaspoon, leaving 1/4 inch shell. Reserve 1 12 cups potato pulp and cut into cubes. In a small cup combine oil and pepper sauce. With a pastry brush, brush the inside of the potato skins with oil mixture. Place on baking sheet. In a bowl toss potato cubes, cheese, bacon, green onion and peppers together.l Spoon filling into potato skins. Bake for 15 minutes until cheese is melted. In a medium bowl, combine sour cream, vinegar and chives. Serve with sour cream dip.
