The ultimate hot turkey sandwich, one of the best uses for that left over Thanksgiving turkey
Ingredients per sandwich
1 piece sour dough bread toasted
3-4 ounces sliced cooked turkey
3 slices crisp bacon
2 slices ripe tomato
1 TBL diced tomato
1/3 cup cheddar cheese sauce
Dash Cayenne pepper or paprika

CHEESES SAUCE 2 cups
4 TBL Butter
3 TBL flour
½ cup finely chopped onion
1 ½ cups milk
Dash of Worcestershire sauce
1 TBL mustard with seeds
½ cup shredded sharp cheddar cheese

Directions:
Directions:
Melt butter over med high heat, add onions and sauté until limp and starting to brown, lower heat to med and whisk in flour and stir for about 1 minute. Slowly add the milk stirring the whole time with a fork or whisk. Add the mustard and dash or 2 of Worcestershire sauce, simmer about 2 minutes until it starts to thicken, then add the cheese. Stir until cheese is melted, salt to taste. Adjust the seasoning, more mustard for zing. Maybe more milk if to thick, Place one slice of toast on a plate, layer turkey, 2 pieces of bacon, 2 slices of tomato, then spoon ¼ to 1/3 cup cheese sauce over the top. Sprinkle with scant shake of Cayenne pepper Crumble the remaining piece of bacon and sprinkle on top, sprinkle 1 TBL diced tomato on top.
