1 c. sliced celery
1/2 c. chopped onion
2 garlic cloves, minced
3 T. margarine
1 1/2 c. low sodium chicken broth
4 c. cubed, peeled potatoes
1 c. julienned carrots
1/4 tsp. pepper
1 tsp. dried parsley

In a skillet, saute celery, onion and garlic in margarine.
Add broth, potatoes, carrots and pepper; bring to a boil.
Reduce heat; cover and simmer for 15-20 minutes or until potatoes are tender.
Uncover and simmer 5 minutes until broth thickens.
Sprinkle with parsley.
