4 tbsp. (1/2 Stick) butter
1/2 cup rice flour
3/4 C. Milk
White Pepper
Dash Kosher Salt or Sea Salt
3/4 C Shredded Cheddar Cheese
Potatoes, peeled and thinly sliced

1. Preheat oven to 350 degrees F. Lightly grease an oven safe baking dish with butter.
2. Melt butter in saucepan. Gradually add flour to make a blond roux, then slowly add the milk and allow the mixture to thicken.
3. Layer potatoes, sauce, and shredded cheese for a total of about three layers. Bake covered for about 45 minutes to an hour, removing the cover the last 10 minutes. Potatoes are done when they are tender. Let stand a few minutes before serving.

You can add chopped onions to this recipe and bread crumbs (GF Bread) to the top also. My kids loved it without the onions of course.
