4 T butter
6 c thinly sliced yellow onions
2 T flour
6 c beef broth
1/2 c dry white wine
1/2 t salt
1/2 t pepper
3 T brandy
6 slices French bread, toasted
6 slices Gruyere cheese
1/2 c fresh Parmesan grated


Directions:
Directions:
Melt butter in large soup pot. Add onions and saute' over medium heat til lightly browned. Add flour and blend. Stir in beef broth, wine, salt and pepper. Bring to a boil. Reduce heat and simmer 10 mins. Remove from heat and add brandy.
Preheat oven to 375º. Place slices of bread in bottom of 6 oven proof soup bowls. Ladle soup over bread, top with Gruyere and sprinkle with parmesan. Bake til cheese melts, about 5 mins.
