2 cups cooked roast beef strips
1 cup sliced celery
8 cherry tomatoes, halved
2 green onions, sliced
1 tablespoon vegetable oil
1 tablespoon vinegar
1 tablespoon sugar, optional
1 teaspoon prepared mustard
teaspoon salt
1/8 teaspoon pepper
shredded lettuce, optional

Directions:
Directions:
In a bowl, combine the beef, celery, tomatoes and green onions. In a jar with a tight-fitting lid, combine the oil, vinegar, sugar mustard, salt and pepper; shake well. Pour over salad; toss gently to coat. Serve on a bed of shredded lettuce if desired.
