1 lb. meat -- turkey/ground beef/chicken
1 c. diced onion
1/2 c. diced green pepper
1 large can whole or diced tomatoes
1/2 c. uncooked white rice
1 tsp. chili powder
1 tsp. salt
1/4 tsp. pepper
OPTIONAL: 1/2 c. diced celery, 1/2 lb. sliced mushrooms

Directions:
Directions:
Brown meat. Add all other ingredients and bring to a boil. Pour entire mix into a greased casserole dish. Cover and bake for one hour at 350 degrees. When serving, top with shredded cheddar cheese, if desired.
