3/4 cup balsamic vinegar
1/2 cup extra virgin olive oil
1/4 cup sugar
2 teaspoons salt
1 teaspoon black pepper
4 fifteen ounce cans black-eyed peas, rinsed and drained
1 cup chopped green bell pepper
1 cup chopped yellow bell pepper
1 cup chopped red bell pepper
1 cup chopped red onion
1 1/2 cups quartered cherry tomatoes
1 cup finely chopped fresh parsley

Combine all ingredients, and toss well. Refrigerate for 2 hours before serving with tortilla chips or saltine crackers.

This is a traditional New Years Day dish for our family.
