1 3/4 c. flour
1 c. sugar
1/4 tsp. salt
1 c. chopped pitted dates
1 T. solid shortening
1 tsp. baking soda
1 tsp. vanilla
1 egg, lightly beaten
1 c. chopped walnuts

FROSTING
2 T. unsalted butter
6 T. light-brown sugar
3 T. heavy cream
1 c. shredded coconut

Directions:
Directions:
Heat oven to 350º. Coat two 5 3/4 x 3 x 2 1/8" mini loaf pans with nonstick cooking spray.
In large bowl, whisk flour, sugar & salt.
Bring 1 c. water to a boil in a small saucepan. Add dates, shortening, baking soda & vanilla. Stir until shortening is melted. Remove from heat; stir into dry ingredients. Add egg & beat with a wooden spoon until all ingredients are combined. Stir in walnuts.
Divide between prepared pans. Bake at 350º for 40 to 45 min. or until toothpick inserted in center comes out clean. Cool in pan on rack for 10 min. Turn out onto rack; cool completely.
FROSTING
Heat broiler. In small saucepan, melt butter & sugar. Stir in cream & coconut. Spread frosting equally over the 2 loaves. Broil for 1 to 1 1/2 min. until lightly browned. Let loaves cool completely.
