Cookies:
1 lb. margarine
2 tsp. lemon extract
3 eggs
6 cups flour
2 cups sugar
1 tsp. soda
2 tsp. vanilla
1/4 tsp. salt

Frosting:
1/4 cup margarine
4 cups powdered sugar
2 egg whites
1 tsp. vanilla
1/4 tsp. cream of tartar
1-2 tsp. light cream or milk

Cookies:
1. Cream sugar and shortening.

2. Add eggs and flavorings.

3. Add dry ingredients. Chill.

4. Roll out to 1/4" thickness

5. Chill again.

6. Cut out cookies with cookie cutters.

7. Bake at 375º until barely brown around edges.

8. Frost


Frosting:
1. Beat thoroughly until frosting is the right consistency to spread on cookies.
