Ingredients: Cake: 1 1/2 c. flour - sifted 1 c. sugar 3 T. cocoa powder 1 tsp. baking soda 1 tsp. salt 6 T. vegetable oil 1 T. white vinegar 1 tsp. vanilla 1 c. water
Mock Marshmallow Frosting: 2 1/2 T. flour 1/2 c. milk 1/2 c. margarine 1/2 c. sugar 1/2 tsp. vanilla

Directions:Cake: Preheat oven to 350º. Grease and flour 9 x 9 cake pan. Sift dry ingredients directly in cake pan. Make 3 "wells" for the liquid with the back of a spoon. Into each "well" pour oil, vanilla and vinegar. Pour water over all of the ingredients. Stir with a fork until well blended - do this quickly. Bake 35 - 40 minutes.
Frosting: In a heavy medium saucepan at medium heat, add flour. Gradually add milk. Stir and cook until thickened and smooth. Set aside to cool.
In a small bowl with an electric mixer, beat margarine until creamy, gradually add sugar until mixture is light.
Add cooled flour mixture, beat at high speed until light and fluffy. Gently fold in vanilla. |

Notes: Don't be alarmed. I know it sounds weird to have a cake with vinegar but it's not bad. The cake is moist and full of flavor. There is no egg in this recipe. This is what I call a "Staple" recipe because most of us have the ingredients already on hand. It's quick to whip up. If you're really in a hurry, skip the frosting and dust the cooled cake with powdered sugar or make a powdered sugar and water glaze over a warm cake. Heck, I've even poured heated sundae sauce over the top.
