3 c. sweet potatoes, mashed
1/4 c. skim milk
2 tsp. rum extract
3 egg whites, beaten
2 T. reduced calorie margarine
Vegetable cooking spray
brown sugar substitute to equal 1 c. brown sugar as indicated on package

Directions:
Directions:
Combine sweet potatoes and 3/4 of brown sugar substitute, milk, margarine, and rum extract. Stir until blended. Spoon into a shallow baking dish coated with cooking spray. Sprinkle remaining 1/4 brown sugar substitute over sweet potato mixture. Bake at 350 for 35 minutes.
