1 cup lentils
1/2 cup onion (chopped)
1 mild pepper or green pepper
1/4 cup olive oil (can use less if you like)
1/4 C. can diced diced tomatoes (pureed)
1/2 TB salt
1/2 tsp oregano
2-3 cloves of garlic (chopped)
1/2 tsp black pepper
1/2 tsp red pepper/or red pepper flakes
approx. 2/1/2 cups of water or chicken broth

Directions:

Brown onion, mild pepper, garlic, and spices in olive oil. Add tomatoes to make a slow simmering sauce.

In separate pan, boil lentils until about 3/4 done. Discard water, then add drained lentils to made sauce. Add cumin and about 2 and 1/2 cups of hot water or (1 and 1/2 cups chicken broth, 1 cup water. )
Cook all about 20-25 more minutes on stovetop. .

Consistency should be "solid soupy" rather than clumpy or solid. Add more or less liquid depending on consistency (I use these measurements at high altitude in Colorado, you might need more or less
