6 pork chops
1/2 tsp. each salt and pepper
2 T. olive oil
2 c. instant brown rice
1 onion, sliced
1 bell pepper, sliced
1 4-oz can sliced mushrooms, drained
1 sm. jar pimentos, drained
4 c. water

Directions:
Directions:
Salt and pepper chops. Brown in olive oil, save drippings. In a greased baking dish, layer with one cup rice, three chops, one-half of onion, bell pepper, mushrooms and pimento. Repeat for second layer. Pour water and drippings over all, cover with foil. Bake in preheated 350º oven for one hour.
