This recipe for Carefree Chicken (a Janice Wolf original), by Denise Wolf, is from Eating with the Wolf Family,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 1/2 cups white uncooked rice, 1 can cream of mushroom soup, 1 can cream of chicken soup (or you can just use 2 cans of cream of chicken soup and leave out the can of cream of mushroom soup) , 2 cans water, 1/2 package dry onion soup mix (if desired), 1 or 2 fryers, cut up or chicken breasts.(I use small skinless thighs or regular thighs)
Sprinkle rice in flat baking dish. Pour soup and water evenly over top. Sprinkle with dry onion soup. Place chicken (skin side up) on top. Sprinkle lightly with salt and paprika. Cover with foil. Bake at 325º for 2 hours. Uncover last 30 minutes to brown.
