2 pkg. dry yeast
2 1/2 Tbsp. sugar
2 1/2 tsp. salt
2 1/2 Tbsp. shortening (I usually use olive oil)
1/2 c. warm water
2 c. warm milk or water
6-7 c. bread flour

Directions:
Directions:
Dissolve yeast in water. Add 1 tsp. sugar. Let yeast grow about 10 minutes until it doubles in size.

Dissolve remaining sugar, salt, and shortening in milk or water. Add yeast. Add flour slowly to make a soft dough. Knead dough 5-10 minutes. Let rise in greased bowl until for about an hour. Punch down dough and let rise an additional hour. Shape dough into either two loaves or into rolls. Let dough rise an additional hour in bread pans for bread or cookie sheets for rolls. Bake in 350º oven. 30-35 minutes for bread and 20 minutes for rolls.

You can punch down the dough as many times as you like. The more you punch it down the more tender the bread will be. Seems like a lot of work but worth it.
