1 small onion, finely chopped
1/4 C white wine
20 oz frozen chopped spinach
1 jar Alfredo sauce
1/8 t ground nutmeg
1/2 t pepper
1/2 C Mexican-style cheddar cheese

Directions:
Directions:
Thaw and squeeze liquid from spinach. Coat large nonstick skillet with cooking spray and heat over medium high. Add onion and cook, stirring, until softened, 5 minutes. Add wine, reduce heat to medium. Cook until liquid is reduced by half, 1-3 minutes. Stir in spinach, Alfredo sauce, nutmeg and pepper. Cook until hot, about 5 minutes. Stir in cheese and cook until melted, 2 minutes.
