1 lb shrimp
1 c rice, cooked and chilled
1 stalk celery, sliced
10 black olives, sliced
1/4 c chopped parsley
1 bunch green onions, thinly sliced

Dressing:
1/4 c mayonnaise
1 tbsp walnut oil
1 tbsp lemon juice
1 small clove garlic, minced
1/4 tsp dry mustard
salt to taste
1/4-1/2 tsp tarragon

Toss salad. Serve topped with avocado slices.
