1 cup sugar
1/4 cup cornstarch
1/4 tsp salt
1 1/2 cups boiling water
1/3 cup lemon juice
1 T grated lemon rind
1 T butter
2 egg yolks
1 baked 9" pie shell

Directions:
Directions:
Heat oven to 300 degrees

Combine sugar, cornstarch and salt. Add water gradually and cook until smooth and thick, stirring constantly. Beat yolks, pour small amount of hot liquid over them gradually, stirring constantly. Cook until thick and smooth. Just before removing from heat add lemon juice, peel and butter.. Pour into shell, cover with meringue and bake for 30 minutes.
