1 T butter
2 T onion, chopped
1/4 cup celery, diced
3/4 cup cabbage, shredded
3/4 cup water
3/4 cup milk or half and half
salt and pepper
1 1/2 tsp cornstarch
2 T water
1/4 cup shredded cheese

Directions:
Directions:
Melt butter in a small heavy saucepan and saute onion and celery for about 5 minutes. Add cabbage and 3/4 cup water. Cover with a tight fitting lid and simmer until cabbage is tender and most of the liquid is gone. Add milk and just bring to a boil. Season with salt and pepper. Mix cornstarch and 2 T water and stir into soup to thicken slightly. Serve with shredded cheese and croutons.
