2 cup flour
3/4 tsp. baking soda
1/2 tsp. salt
1 cup sugar
1/4 cup butter, softened
2 eggs
1 1/2 cup mashed banana (approx. 3 large)
1/4 cup plain yogurt
3 Tbsp. dark rum (optional)
1/2 tsp. vanilla
1/2 c. flaked, sweetened coconut, plus 1 Tbs.

Glaze: 1/2 cup powdered sugar
1 1/2 Tbsp. fresh lime or lemon juice

Preheat oven to 350. Combine butter and sugar, then add eggs, banana, yogurt, rum, and vanilla. Beat well. Add flour, baking soda, and salt. Mix until moistened. Add coconut and stir. Pour batter into greased loaf pan and sprinkle with remaining 1 Tbsp. coconut. Bake 1 hour or until toothpick comes out clean.

Combine powdered sugar and juice in a small bowl for glaze.

Cool 10 minutes in the pan, then remove from pan, drizzle with glaze, and cool completely on wire rack.
