4 large sweet potatoes peeled, 1 lb. leeks trimmed split rinsed well and cut into 1 inch segments, 2 eggs, 1 c. heavy cream, 3 T. grated Parmesan cheese, 1/4 tsp. allspice, salt and freshly ground pepper.

Preheat oven to 350 º. Slice the potatoes 1/8 inch thick. In a large pot bring 3 quarts of slated water to the boil and plunge the potatoes into it for 5 minutes. Drain and let cool. Plunge leeks into the boiling water for 10 minutes, drain and let cool. Arrange the leeks on the bottom of large gratin dish and arrange the potato slices over the leeks. In a bowl, mix the eggs with the cream, parmesan, allspice, and salt and pepper to taste, pout the mixture over the leeks and potatoes, and bake 30 - 40 minutes or until nicely browned.
