1/4 c. butter
1/2 c. diced onion
1/2 c. diced carrot
1/2 c. diced celery
1/4 c. flour
1 1/2 Tbsp. cornstarch
1 qt. chicken broth
1 qt. milk
1/8 tsp. baking soda
2 c. velveeta cheese
salt and pepper

Melt butter in pot. Saute onions, carrots and celery. Add flour and cornstarch. Cook until bubbly. Add chicken broth. Add milk to make a smooth sauce. Cook gently stirring frequently, so not to scorch. Add cheese, baking soda, salt, pepper, and parsley. Soup is ready once all of the cheese is melted.
