3 c. flour
2 TB. vanilla
1 tsp. baking soda
3 med. bananas, mashed
3/4 tsp. salt
1 c. coconut
3 eggs
1 c. walnuts, toasted & chopped
2 c. sugar
1/2 c. buttermilk
1 1/3 c. oil

Directions:
Directions:
Sift the flour, soda and salt. Beat the eggs, sugar and oil. Add the vanilla and the bananas. Fold in the flour mixture, then the buttermilk and lastly the coconut and walnuts. Makes 2 loaves. Bake @ 350º for 60-65 minutes.
