3 c. flour
2 TB. vanilla
1 tsp. baking soda
3 med. bananas, mashed
3/4 tsp. salt
1 c. coconut
3 eggs
1 c. walnuts, toasted & chopped
2 c. sugar
1/2 c. buttermilk
1 1/3 c. oil

Directions:
Directions:
Sift the flour, soda and salt. Beat the eggs, sugar and oil. Add the vanilla and the bananas. Fold in the flour mixture, then the buttermilk and lastly the coconut and walnuts. Makes 2 loaves. Bake @ 350 for 60-65 minutes.

Why, everyone knows that "coconut does not belong in banana bread." (use right hand to slice the air with conviction..........)
