8-10 slices of bacon, diced and fried
2 hard boiled eggs, sliced
1 diced onion
3 stalks diced celery
1 table. dry mustard
salt & pepper
1/2 green pepper, diced
3 lbs. potatoed, cooked and sliced
some fresh parsley

Directions:
Directions:
Fry the bacon and drain on paper towels. After boiling the potatoes, peel the jackets off and set aside. Dice all your vegetables. To the bacon grease, add vinegar (about 1/2 cup) and water (1/2 cup), the mustard, salt & pepper. Cook together until it comes to a boil. Pour over sliced potatoes, onions, celery, green pepper and sliced eggs and a little parsley. Mix well and simmer over low heat for about 5 minutes. Serve warm.
