Dough
1 1/2 tsp. active dry yeast
2 1/2 c. warm water
6 1/2 c. flour
1/4 c. brown sugar
1 1/2 tsp. salt

Filling
1 c. packed brown sugar
3 Tbs. cinnamon
1/2 c. softened butter

Icing
6 Tbs. softened butter
6 oz. softened cream cheese
2 1/4 c. powdered sugar
1 tsp. vanilla
1/4 tsp. salt

Dough - Dissolve yeast in warm water. Put flour, brown sugar and salt in mixer bowl (you need a kitchenaid or other heavy duty mixer for this recipe). Pour yeast and water into bowl. Mix on low until dough is smooth and elastic, scrapping the sides of the bowl as needed. Once the dough is formed, mix for another 5-8 minutes to knead it. Oil a large bowl, place dough inside and cover with plastic wrap. Let rise in a warm place until doubled. About 1-2 hours. Punch down, let rest for 10 mins. Roll out dough into a 12X24 inch rectangle.

Filling - Mix brown sugar and cinnamon in a medium bowl. Spread softened butter evenly over the dough. Sprinkle entire dough with the brown sugar mixture. Roll up the dough starting from the 12 inch side. Cut into 6-8 equal sized rolls. (They will be big! Sometimes I cut them into 12 rolls just to make more smaller rolls.) Place rolls on a greased baking sheet about 1 inch apart, cover loosely with a cloth. Let rise until doubled, about 30 mins to 1 hour. Bake in a 400º oven for 15-20 minutes.

Icing - While rolls are baking, mix all the icing ingredients until they are smooth. Spread the icing over the warm rolls. There is enough icing to completely cover each roll with a generous coating.

Get a plate and a fork and a glass of milk and enjoy!!
