2 cups shredded cabbage and carrot coleslaw mix
3 ouces romaine lettuce
1 tablespoon extra virgin olive oil
1/4 t. salt
1/8 t. pepper
6 8 inch tomato basil or plain tortillas
12 ounces of thin sliced cooked turkey breast
6 T light Boursin cheese
18 slices plum tomatoes. about 3 tomatoes
38 slices of cucumber.
Directions:
Directions:
Combine 6 ingredients in a large bowl. Toss to coat.
Spread 1 Tablespoon of Boursin cheese over each tortilla. Top each tortilla with 6 cucumber, 3 slices tomatoes and approximately 2 ounces turkey.Divide slaw mixture evenly on tortilla.. Roll and cut in half.
