1 c. white sugar 1 tsp nutmeg 1 c. steamed yellow squash (mashed) 1c. heavy cream 3/4 tsp salt 3/4 tsp ground ginger 3 eggs 1 9" unbaked pie shell
Add sugar, salt and spices to squash, mix well. Beat eggs, add cream, then mix with squash. Pour mixture into unbaked pie shell. Bake in hot oven 450º for 10 minutes, reduce temp. to 350º for 40 minutes or until knife inserted in center of pie comes out clean.
