3/4 cups sugar
1/2 cup butter, softened
2 eggs
1 cup (2 medium) mashed, ripen bananas
1/3 cup milk
1 teaspoon vanilla
2 cups flour
1/2 cup chopped nuts (optional)
1 teaspoon baking soda
1/2 teaspoon salt

Directions:

Heat oven to 350º. Grease bottom only of 9x5 or 8x4 inch loaf pan. In a large bowl, beat sugar and butter. Beat in eggs. Blend in bananas, milk and vanilla. In a small bowl, combine flour, nuts, baking soda and salt. Mix well. Add to banana mixture. Stir just dry ingredients are moist. Pour into greased pan. Bake for 50-60 minutes or until toothpick inserted in center comes out clean. Cool in pan for 5 minutes before removing. Wrap tightly and store in refrigerator.
