1 red bell pepper
1 green bell pepper
1 yellow bell pepper
1/2 c. red onion, diced
1 can of corn, drained
1 clove garlic, minced
1 tsp. cilantro
1/4 c. olive oil
4 T. red wine vinegar
1 t. lime juice
ground pepper
1 can black beans
tortilla chips

Directions:
Directions:
Dice all of the peppers. In a bowl combine peppers, onion, corn, garlic and cilantro. Toss to mix. Add olive oil, vinegar, lime juice and salt and pepper to taste. Toss again. Add the beans, toss well and serve with chips

You can add other vegetables you have on hand such as diced tomatoes, thinly sliced carrots, etc.
