1/4 c. butter
1/4 c. flour
1/2 tsp. salt
1/4 tsp. pepper
1 c. chicken broth
1 c. whipping cream
2 T. cooking sherry
2 c. cooked, cubed chicken
10-12 oz. cooked spaghetti (broken into pieces before cooking)
3 oz. can mushroom, drained (optional)
1/2 c. grated Parmesan cheese

Heat oven to 350. Melt butter over low heat. Blend in flour and seasonings. Cook, stirring until mixture is smooth and bubbly. Remove from heat. Stir in broth and cream. Heat to boiling, stirring constantly. Boil 1 minute. Add sherry. Stir in cooked spaghetti, chicken, and mushrooms. Pour into baking dish. Sprinkle with Parmesan cheese. Bake for 30 minutes or until bubbly in the center. Garnish with parsley or green chives. Serves 6.
