3/4 cup paprika
1/4 cup black pepper
1/4 cup celery seed
1/4 cup sugar
2 tbsp. onion powder
2 tbsp. dry mustard
2 tbsp. cayenne pepper or less.
Zest of 3-4 lemons

Combine all ingredients in a bowl. This rub is to be applied freely to your bird the night before you BBQ.
Wash you chicken first, let dry. sprinkle rub over entire bird and rub in well. Wrap you chicken in cellophane and store in the fridge overnight. Remove chicken about 45 mins. before you BBQ to allow it to warm up a bit. Try to BBQ over indirect heat at a low temperature 225º-250º. Cook till bird reaches 170º. Cooking times will vary (1-3 hours) depending on your grill. Just remember low and slow.

This is a standard all purpose rub used for BBQ chickens.
Try using only 1 tbsp. of cayenne the first time you do this.
Use an old spice jar to shake on your rub, use for storage.
