2 large sweet potatoes
1 T. olive oil
1/2 tsp. salt
1/4 tsp. black pepper
2 cloves garlic, finely minced
4 wedges fresh lime

Directions:
Directions:
Preheat oven to 375 degrees. Peel potatoes and cut into 1 inch cubes. Place sweet potato chunks onto a baking sheet and toss with olive oil. Sprinkle with salt, pepper and garlic and toss to coat. Spread out in one layer on baking sheet.

Roast 30-35 minutes, turning once with spatula, or until potatoes are cooked through and begin to brown.

Just before serving, squeeze each serving with fresh lime juice.
