"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1 lb. (about 4 c.) cranberries
2 c. sugar
1/4 tsp. ground cinnamon
1/4 c. bourbon

Directions:
Directions:
Preheat oven to 350 degrees. Combine cranberries, sugar and cinnamon in 9x13-inch baking dish. Cover tightly with foil and bake until cranberries are tender and sugar is dissolved, stirring once at the ˝-way mark, about 1 hour total bake time. (Note: if the foil is not tight, the berries can bubble over and create a mess in your oven so placing a jellyroll pan below the baking dish solves that problem.)

Remove dish from oven after 1 hour and stir in bourbon. Refrigerate cranberry sauce until well chilled. (Can be prepared 1 week ahead). Transfer to bowl and serve.
