1 (15.3oz.) Box Hungry Jack Mashed Potatoes
2 (8oz.) pkg. softened cream cheese
6 c. water
16 oz. container sour cream
1 1/2 sticks butter
paprika
2 tsp. each garlic and onion salt
chives (opt.)
2 c. milk
non-stick cooking spray
Directions:
Directions:
Heat oven to 350ºF. Spray a 13x9-inch baking dish with non stick cooking spray; set aside. Heat water, butter, garlic and onion salts to boil in a large saucepan. Remove from heat. Add cream cheese, milk and sour cream, stirring until smooth. Stir in potatoes, mixing until all ingredients are combined. Spread into baking dish. Sprinkle with paprika and chives and bake 1 hour until golden brown. TIP: Before adding paprika and chives and baking, casserole can be refrigerated for up to 48 hours.

I always thought instant potatoes were gross, but this recipe is so good. My family loves it and it makes a ton. We can use one dish for three meals. Or if you have a lot of company, this really goes around.
