1 to 2 cups cooked lobster meat
1/3 cup dry sherry or white wine
4 cups milk
3 cups heavy cream
3 TB butter
3 TB flour
1 tsp. steak sauce or to taste
pinch cayenne pepper
freshly ground pepper to taste
salt to season

Directions:
Directions:
In a small bowl, mix the cooked lobster meat with the sherry or wine. Set aside. Melt the butter in a fairly large pot over medium heat. Add flour and cook for one minute, stirring constantly so that paste is formed. Slowly pour in milk and cream, a little at a time, and continue to stir until the mixture is thickened forming a basic sauce. Add seasonings and steak sauce and stir well. Add the sherry and lobster mixture and stir well and cover the stock pot. Cook for 5 to 10 minutes, stirring occasionally and serve with crusty bread.
