6 chilies, roasted and peeled
6 oz. Monterey Jack Cheese
4 beaten eggs
1/3 c. milk
1/2 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. shredded Cheddar Cheese

Directions:
Directions:
Half chili peppers and remove seeds. Place strips of Monterey cheese inside of peppers. Place in a 8X8 inch greased baking dish. Combine eggs and milk; beat in flour, baking powder, and salt. Beat until smooth. Pour over chilies. Sprinkle with Cheddar cheese. Bake at 350º until golden brown (about 30 minutes).
