4 potatoes, peeled and shredded
1 tsp. salt
1 med. sweet onion, finely chopped
1/4 tsp. white pepper
fresh parsley
2 TB. flour
1 egg
1/2 tsp. baking powder

Directions:
Directions:
Squeeze water out of potatoes. Add the rest of ingredients. Heat griddle or frying pan-if using frying pan, use 1/2 c. oil, if using griddle, grease generously. Drop by spoonfuls, cook until brown.

Be very careful with the hot oil. If you're cooking naked be sure to wear an apron. These pancakes go well with sour cream or applesauce and I usually serve them with smoked sausage.
