2 1/2 cups sifted all purpose flour
3 tsp baking powder
1/2 tsp salt
1 c sugar
1/2 c softened butter or margarine
1 egg beaten
1 c mashed ripe bananas (3 small)
1/2 c milk
2 tbsp of grated orange peel or 1 tbsp grated lemon peel
1 cup coarsely chopped walnuts


Directions:

Preheat oven to 350 degrees. Mix flour with baking powder and salt and set aside. With electric mixer beat sugar, butter, and egg until smooth. Add bananas, orange peel, and milk. Mix well. Add flour mixture. Beat just until smooth. Add nuts.

Pour batter into a prepared bread pan. Bake about 1 hour or until a cake tester comes out clean.

Let cool in pan 10 minutes. Cool completely on a wire rack. Slice in 1/2 to 1 inch slices.
