1 Pound of Crawfish Tails
3/4 Stick Butter
1 Onion, Chopped Fine
1 Bell Pepper, Chopped Fine
1 Stalk Celery, Chopped Fine
1 Can of Cream of Mushroom Soup
2 Pie Shells, (1 for Bottom and 1 for Top)
2 Tablespoons Chopped Green Onion Tops and Parsley

Directions:
Directions:
SautÚ onion, pepper and celery until veggies are soft. Add crawfish, mushroom soup and a little water to mixture. Cover and simmer 20 minutes. Next, add onion tops and parsley and cook another ten minutes. Place in pie shell and cover with top. Bake at 300║ until pie crust is brown.
