1 large apple thinly sliced (place in sprite)
1 large pear thinly sliced (place in sprite)

1 (16 oz.) pkg. romaine lettuce, chopped
1 c. roasted, salted cashews
1/2 c. sweetened dried cranberries

1 (6 oz.) block Swiss cheese, shaved or shredded

DRESSING:
2/3 c. lite olive oil or vegetable oil
1/2 c. white sugar
1/3 c. lemon juice
1 1/2 Tbsp. poppy seeds
2 tsp. finely chopped onion
1 tsp. Dijon mustard
1/2 tsp salt

Directions:
Directions:
SALAD: Pat dry apples and pears. Add all ingredients, except cheese, toss and plate.

DRESSING: Place all of the dressing ingredients in blender and mix. Pour into serving dish. Add dressing just before serving and top with grated cheese.

(Some may find dressing too sweet and should reduce sugar to 1/4 cup.)


When I make this salad, I make individual plates, adding each item separately for presentation and then I drizzle the plated salad with the poppy seed dressing.
