1/2 c vegetable oil
1/2 c flour
1 c celery
2 c onion
1 c bell pepper
4 cloves garlic
1 1/2 t thyme
4 bay leaves
1 can tomato paste 1/2 t cayenne pepper
3 quarts seafood or chicken stock
1 lb crab meat (can be canned)
1 1/2 lbs small shrimp (boiled and peeled)
24 lightly saute'ed oysters (can be canned)
gumbo file'
diced green onions

Directions:
Directions:
Heat oil in stock pot over medium-high. Stir in flour. Cook stirring for 20 mins or til flour is the color of a penny. Add celery, onions and bell pepper. Cook 15 mins stirring constantly. Add garlic, thyme, bay leaves, tomato paste and cayenne. Cook stirring 5 to 10 mins. Add stock and bring to a boil. Reduce heat to medium and simmer 5-10 mins.
Add crab, shrimp and oysters.
Serve over rice.
Garnish with file' and green onions.
