2 small cornish hens (1lb each)
Sprigs of fresh thyme
2 lemons
salt, pepper
1/4 stick butter (melted)

Directions:
Preheat oven 375.
Remove contents of cavity.
Wash and pat-dry cornish hens.
Place in roasting pan.
Slice one lemon in half, place 1 half in each cavity.
Paint melted butter on hens with cooking brush.
Slice second lemon in half, squeeze juice over each bird.
Sprinkle salt and pepper on each bird.
Stuff hen cavity with 4-5 thyme sprigs.
Cook until internal temperature reaches 160 degrees (appx 45 - 50 min).
Serve hot.

Contents of cavity are often packaged in a plastic bag. Sometimes they forget the neck. Be sure to remove all contents, especially if you buy the bird from a gourmet grocery store (recommended). There are recipes for those extra parts readily available on the internet.

Birds over 1.5 pounds are chickens, not cornish hens, and are not recommended. Bigger is not necessarily better.
